1 pound cooked lobster meat (fresh or frozen, thawed)
2 tablespoons butter
1/4 teaspoon paprika
Salt and freshly ground black pepper to taste
4 slices bread (sourdough, whole wheat, or English muffins)
1 ripe avocado, mashed
1 tablespoon lime juice
Pinch of salt
3 large egg yolks
1 tablespoon lemon juice
1/2 cup unsalted butter, melted
Pinch of cayenne pepper (optional)
Fresh chives, chopped (optional)
Red pepper flakes (optional)
Lemon wedges (optional)


Instructions

  2. If using pre-cooked lobster meat, thaw if frozen. If cooking live lobster, steam or boil until bright red and meat is opaque. Let cool, then remove meat and chop into bite-sized pieces.

  3. In a skillet over medium heat, melt butter. Add lobster meat and paprika. Sauté for 2-3 minutes until warmed. Season with salt and pepper. Set aside.

  4. Toast bread slices to desired crispness. Mash avocado with lime juice and salt. Spread evenly over toasted bread.

  5. Fill a saucepan with 1 inch of simmering water. In a heatproof bowl, whisk egg yolks and lemon juice. Place over saucepan (double boiler) and whisk until thickened and pale yellow (5-7 minutes).

  6. Remove from heat. Slowly drizzle in melted butter while whisking continuously until sauce thickens. Season with salt and cayenne pepper (if using).

  7. Place avocado toast on plates. Top each slice with warm lobster. Spoon hollandaise sauce over lobster. Garnish with chives, red pepper flakes, and lemon wedges if desired. Serve immediately.
