1 pound cooked lobster meat (fresh or frozen, thawed)
2 tablespoons butter
1/4 teaspoon paprika
Salt and freshly ground black pepper to taste
4 slices bread (sourdough, whole wheat, or English muffins)
1 ripe avocado, mashed
1 tablespoon lime juice
Pinch of salt
3 large egg yolks
1 tablespoon lemon juice
1/2 cup unsalted butter, melted
Pinch of cayenne pepper (optional)
Fresh chives, chopped (optional)
Red pepper flakes (optional)
Lemon wedges (optional)

If using pre-cooked lobster meat, thaw if frozen. If cooking live lobster, steam or boil until bright red and meat is opaque. Let cool, then remove meat and chop into bite-sized pieces.
